Black Currant Simple Syrup

  • 1 cup black currants
  • 1/2 cup white sugar
  • 1 cup water

Place all ingredients in a saucepan(there is no need to remove twigs, all the solids will be strained out).  Bring to a rolling boil, while constantly stirring.  After ten minutes, press on any currants remaining whole with a spatula.  Remove from heat and pour through a fine wire strainer.  Chill and serve with seltzer or in adult beverages.
