History at Three Springs:  Stayman has been grown at Three Springs for at least 60 years

Dr. J. A. Stayman raised a seedling from a 'Winesap' in 1866 that first fruited in 1875; Stayman's Winesap or, shortened, Stayman Winesap. While the original tree was destroyed in a storm in the year 1899 the variety went on to great popularity due to it's reputation as a baking apple and its early commercialization by Stark Bros. Nursery, among others. This variety has a thick, dark red skin and a yellow flesh that makes a great eating apple if you prefer your apples slightly more tart than sweet. It remains a great choice for baking applications and is a favorite apple of Dave Wenk for fresh eating.
