Cameo is a great example of the role that storage can play in flavor development. Late September or early October is our expected harvest time for Cameo. Right off the tree, the fruit have a nice balance of sweet and tart packed into its yellow flesh. This apple is a great keeper in regular storage. We often store these apples into late spring and early summer. Over the course of these months, some of the acidity in these fruits "blows off" and volitalizes into the atmosphere and you're left with only sweetness after a few months of storage. Cameo have long been a favorite of our market customers in through the beginning of peach season most years.
